This healthy beetroot chocolate brownie is butter free and uses minimal chocolate - making it healthy and affordable as well as really tasty!

Healthy Chocolate Brownie

For this chocolate brownie we  are selecting ingredients from the Mediterranean again - combing the best from the north and south of the Mediterranean coasts.

What makes this recipe different:

Soft de-stoned dates
Carob flour from fruit of Spanish Carob or Algorrobo trees (often called a Mediterranean oak)
Spanish premium Serriana Extra Virgin Olive Oil instead of coconut oil or butter 

Together with the beetroot, these provide a chocolatey, moist and dense brownie flavour

This recipe makes enough to fill a large cake tin and provide 10 to 12 slices.

ingredients

100g of Serriana Olive Oil
300g of cooked and chopped beetroot
15g of linseed (vegan option) or 1 medium egg
250g of ground almonds
60g of cocoa powder
100g of soft de-stoned dates
100g wholemeal self-raising flour
1 tsp ground cinnamon
1 tsp of baking powder
1 pinch of salt
75g of carob flour
Option: Add 100g of brown sugar if you prefer your cake to be sweeter
Option: Use a chocolate paste (or better, a carob and nut paste) to top each brownie when ready to serve

method 

Step 1. Preheat your oven to 180 degrees centigrade and prepare a cake tin - use grease proof paper with a little olive oil.

Step 2. Combine the 300g of cooked beetroot, 250g of ground almonds, 1 egg (or ground linseed), 60g of cocoa powder, 100g of dates and 100g of Serriana olive oil in a blender and blend - alternatively, use a bowl and a hand held blender.

Step 3. Add the 100g of flour, 1 tsp of cinnamon, 1 tsp of baking powder, a pinch of salt and 75g of carob powder. Option, add 100g of brown sugar.

Step 4. Add a little extra water (if necessary) so that the mixture pours relatively easily into your cake tin. Pour the mixture.

Step 5. Bake for 20 minutes

Step 5. Remove from oven and allow to cool. 

Step 6. Place the brownie cake on a board and with a large knife or slicer, cut into to cubes. Then store in an airtight container or tin foil until you are ready to serve.

Step 7. Serve with a carob and nut 'chocolate' paste, or a little vegan cream.

This delicious healthy chocolate brownie hardly contains any chocolate and has little added sugar. Hence, you may choose to add a little extra sugar to the recipe (see above), or alternatively, top each slice with a healthy Nutella alternative - such as this carob and hazelnut paste shown below.
