This Mushroom, Walnut, Feta and Spinach Pastry Parcel recipe is one of my favourites! And, it is pretty easy. 

This Flaky Pastry Spinach and Mushroom Bake is so delicious, I often make a bunch. One to eat now, and another to keep for later and a third for the freezer! Here's how to do it:

Essentially, everything is made in one large pot.

Then, roll out the pastry (I buy mine from the supermarket) and put the contents of the pot onto the pasty. Fold the pasty around the filling. Then, put it into the oven for 30 minutes. The ingredients here are enough for a main dish for 4 people.

STEP 0 – PREPARATION

It’s a good idea to pre heat the oven to 180 degrees and layout the filo pastry before you begin.
STEP 1 – Add and FRY UNTIL GOLDEN

1 large (or 2 small) leek(s)

50g of Serriana olive oil

STEP 2 – add and COOK UNTIL SOFT

4 cloves of garlic

175g Mushrooms (sliced)

100g Walnuts (chopped)

STEP 3 – ADD WINE AND COOK FOR 10 MINS (OR UNTIL THE LIQUID HAS EVAPORATED)

White wine (half a small glass – 50ml). Okay, this is not strictly essential. If you wish, swap the wine for 50ml of vegetable stock or a grape juice or just water. Alternatively, a little red wine vinegar also helps enrich the flavour

Add herbs – fresh if possible – such as thyme and /or sage plus a little salt and pepper

STEP 4 – ADD SPINACH FOR A FINAL FEW MINUTES

200 grams of fresh spinach

STEP 5 – EMPTY CONTENTS iN THE centre of the FILO PASTRY SHEET AND ADD FETA CHEESE

100 grams of Feta cheese (cubed).

(optional) STEP 5a – ADD A RED CHUTNEY OR CRANBERRY SAUCE TO THE MIX

A generous helping of a red beetroot and / or plum chutney or, a cranberry sauce, will add a lovely sharp bitter / sweet flavour to your pastry bake.

STEP 6 – Fold the pastry to make a pacel 

A little oat milk. Brush the surface of the folded pastry with a little oat milk to give a crisp golden finish.

Step 7 - BAKE IN THE OVEN AT 180 DEGREES UNTIL GOLDEN

About 30 minutes

Vegan variation

To make this Pastry Bake a vegan recipe,  swap the feta cheese for a vegan cheese or, even better, swap cheese for nutritional yeast which will add a similar cheesy flavour but is healthy, fully vegan alternative.

Also, remember to choose a vegan pastry when shopping.

How to serve flaky pastry spinach and mushroom bake

Another serving tip is to add a red sauce chutney or cranberry sauce. The tart but sweet flavour of the fruit sauce will deliver a beautiful contrast with the crispy bake. In the example above, I actually added the red sauce chutney to the mix before baking. You can actually see some chunks of beetroot poking out!
